Ingredients of Shir Sewain

  1. You need 1/2 litre of milk.
  2. Prepare 100 gm of semiya (thin vermicelli).
  3. It’s 50 gms of khoya(mawa).
  4. You need 150 gm of sugar.
  5. It’s 10-15 of raisins.
  6. It’s 8-10 of cashew nuts cut in halves.
  7. Prepare 1 tbsp of pistachio, sliced.
  8. It’s 8-10 of almonds.
  9. You need 5-6 of saffron strands.
  10. It’s 1 tbsp of ghee.

It was a very heavy dessert with milk and khoya, but my husband loved it. The sweet sewain is prepared by cooking roasted vermicelli in milk with sugar added to it. In this recipe, we have added khoya as well, to give it a different texture. The tongue-tickling sweet is quick to.

Shir Sewain step by step

  1. Add two tb spoon milk to the saffron and keep it aside..
  2. Heat ghee in a karahi and fry the raisins, cashew and almonds. Keep aside..
  3. Add vermicelli in the same pan and sauté till it turns golden colour. It will take around 3 minutes..
  4. To this add milk and let vermicelli cook for 5 minutes. Add sugar and let it dissolve in kheer mixture..
  5. Let the kheer simmer for 10 minutes till it become little thick. Add crumbed khoya and mix well and simmer for further 10 minutes..
  6. Add saffron dissolved milk and mix well. Switch off the flame add raisins, cashew and almonds and mix well..
  7. Garnish with pistachio and serve Uttar Pradesh style Shir Sewain..
