Easy to make Carrot Halwa. Carrot halwa or gajar halwa is a traditional dessert made by slow cooking carrots in milk. This recipe will give you the best north Indian. Most Indian households make this gajar halwa during the winters as carrots are in full season.

To make gajar halwa, it is important to buy tender and juicy carrots so that they are easy to grate. Some arm work is needed to make this halwa as you have to first grate the carrots and then slow cook them in stovetop and keep on stirring them on regular. Carrot halwa is an Indian dessert made out of carrots, milk, and a sweetener. You can have Easy to make Carrot Halwa using 6 ingredients and 7 steps. Here is how you cook it.

Ingredients of Easy to make Carrot Halwa

  1. It’s 1 kg of Carrot.
  2. It’s 500 ml of Full cream milk.
  3. Prepare 500 gms of Sugar.
  4. You need 1/2 tea spoon of Cardamom powder.
  5. Prepare as needed of Roasted cashews and Almonds few.
  6. You need 4 table spoons of Ghee / Clarified Butter.

This makes the halwa making process easy and fast. Transfer the cooked carrot and milk into a thick bottomed vessel. Allow it to boil on high flame stirring continuously. When the milk is reduced to half, reduce the flame, add sugar and continue boiling by stirring it.

Easy to make Carrot Halwa step by step

  1. Wash the carrots well and cut them in to pieces. Put them in to a food processer or blender and give few turns. Take them out..
  2. Heat a pressure pan with 3 tea spoons of ghee, Roast the grated carrots for a minute. Pour in the milk. Close the pan and cook up four or five whistles..
  3. Once the steam is released take the lid off and switch on the stove again. Add the sugar and keep stirring..
  4. Add the ghee little by little in between,.
  5. When the stuff starts getting thick add the cardamom powder..
  6. Stir till the moisture is completey absorbed and stuff comes rolling out..
  7. Switch off and garnish with nuts..

Wash carrots, peel of the skin and grate them, set aside. Heat ghee in a pan and roast the cashews till golden brown and keep it aside. Wash, peel the skin and grate carrots finely. (use the small hole for grating). Making carrot halwa is easy and I make it quite often. If Delhi carrots are not available I use organic regular carrots to make this halwa.
