To make gajar halwa, it is important to buy tender and juicy carrots so that they are easy to grate. Some arm work is needed to make this halwa as you have to first grate the carrots and then slow cook them in stovetop and keep on stirring them on regular. This makes the halwa making process easy and fast. Transfer the cooked carrot and milk into a thick bottomed vessel. Allow it to boil on high flame stirring continuously. When the milk is reduced to half, reduce the flame, add sugar and continue boiling by stirring it.
Wash carrots, peel of the skin and grate them, set aside. Heat ghee in a pan and roast the cashews till golden brown and keep it aside. Wash, peel the skin and grate carrots finely. (use the small hole for grating). Making carrot halwa is easy and I make it quite often. If Delhi carrots are not available I use organic regular carrots to make this halwa.
