Ingredients of Kesariya Sheer khurma

  1. It’s 3 cups of full cream milk.
  2. Prepare 2 tsp of ghee.
  3. Prepare 1 cup of thin vermicelli /seviyan.
  4. You need 1/4 of th cup sugar or as per the taste.
  5. You need 5-6 of dates deseeded and chopped.
  6. You need 1/2 tsp of cardamom powder.
  7. It’s 1 pinch of saffron (kesar) strands, dissolved in 1 tsp warm milk.
  8. You need 5-8 of cashewnuts chopped.
  9. It’s 10-12 of raisins /kismis.

Kesariya Sheer khurma instructions

  1. Heat 1 tsp ghee in pan, add the vermicelli and saute for 1 minute or till they turn golden brown in colour..
  2. Take a deep vessel and add 3 cups of milk and bring it to a boil.
  3. Add roasted vermicelli and mix well and cook on low flame for about 20 minutes..
  4. Meanwhile, heat the remaining ghee in a kadhai and add the cashewnuts and almonds and saute till they turn golden brown in colour. Keep aside..
  5. Add the chopped dates and sugar to the cooked milk-vermicelli mixture, mix well and simmer for 5 minutes..
  6. The kheer is thickened now. Add the cardamon and saffron milk and mix well and remove from the flame..
  7. Add the cashewnuts, almonds, pistachios and raisin and mix well..
  8. Serve hot or chilled garnished with cashews, kismis, almonds pistachios and saffron… Enjoy! !!!!.
