Beetroot falafel. To serve, mix the tahini with the yogurt, sugar and some seasoning, then dollop onto the flatbreads with the warm or room-temperature falafels, diced beetroot and beet leaves or salad. This beetroot falafel is a fabulous recipe suitable for vegans. It combines the earthy flavours of the beetroot with the traditional flavours of the falafel.
The version I suggest here is a vegan tahini sauce with an orange flavour. Otherwise, you can make a Yoghurt Tahini sauce which would work just as well. Beetroot gets my top vote for its incredible nutritional profile and its ability to help lower blood pressure, improve stamina and support healthy liver function. So it was only a matter of time before it appeared in my falafel. Falafel, often considered fast food or street food in the Middle East, is actually a very versatile dish.
