  1. It’s of Cashew Nuts.
  2. You need of Full Fat Milk.
  3. Prepare of Grated carrots.
  4. You need of Clarified Butter.
  5. Prepare of Sugar.
  6. Prepare of strands of saffron.

Kesar Kaju Carrot Halwa step by step

  1. Firstly soak cashew in milk for 3-4 hours. Keep few cashews aside for garnishing. 4-5 will be enough for garnishing..
  2. After soaking for enough time grind the cashews and milk in a blender to get a smooth paste..
  3. Now heat a thick bottom pan on medium flame. Then put the clarified butter in it..
  4. Soak few strands of saffron in milk and keep rest for garnishing..
  5. Now pour the cashew and milk paste and reduce the flame to low heat..
  6. In to this mix in the grated carrots..
  7. Now add sugar and stir the mixture continuously..
  8. Keep on stirring till the mixture gets thick, also add the saffron soaked in milk..
  9. Stir the mixture continuously and continue cooking on low flame..
  10. Slowly the mixture will get thick and start leaving the bottom and sides of the pan. At this point the mixture is ready..
  11. Now grease any pan with ghee in which you want to set the barfi..
  12. Pour the barfi mixture into this pan and level it properly..
  13. Garnish with grated cashews, it's pieces and saffron. Allow to set at room temperature..
  14. After it cools and comes down to room temperature cut in desired shape or you can even scoop out and serve in a bowl with more garnishing..
