Ingredients of Chole dhaniya masala

  1. It’s of chickpeas (kabuli chana).
  2. Prepare of bengal gram(chana daal).
  3. You need of coriander seeds(dhania).
  4. Prepare of fresh coriander(dhania patta).
  5. It’s of Salt.
  6. Prepare of cinnamon(daalchini).
  7. It’s of cumin seeds(jeera).
  8. You need of cloves(laung).
  9. Prepare of green chillies.
  10. You need of ghee.
  11. Prepare of medium onion(pyaz),finely chopped.
  12. Prepare of ginger paste.
  13. You need of garlic paste.
  14. You need of dried mango powder.
  15. You need of garam masala powder.
  16. You need of Black salt.
  17. You need of red chilli powder.
  18. Prepare of turmeric powder (haldi).
  19. Prepare of baking soda(mitha soda).
  20. Prepare of black cardamom.

Chole dhaniya masala instructions

  1. Soak the chickpeas overnight.In the morning add 3 cups of water little salt..and a pinch of baking soda into it and pressure cook for 7-8 whistles..
  2. Now take the chana daal and pressure cook it for 4 whistles with a little bit of salt and turmeric powder, meanwhile, you make a paste of Coriander leaves with 2-3 green chilies..
  3. Heat 3 tsp of ghee in a pan. Add the onion and saute for 3-4 minutes or till golden. Add the ginger-garlic paste and continue to saute for another minute..
  4. Add the spices powder..dried mango powder..garam masala, black salt, coriander paste into it. Fry it with little water in low flame for 5 minutes.
  5. Lightly roast and powder the cinnamon, cumin seeds, coriander seeds, black cardamom and cloves.
  6. Mix this roasted powder to ur gravy and saute it well..
  7. Now add chickpeas and Bengal gram and mix adjust the salt and half cup water and let the mixture come to boil..simmer it for 5 minutes in low flame..
  8. After 5 minutes. Now Transfer this into the pressure cooker for 4 whistles..
  9. After that heat, the remaining ghee in a ladle, take it off the heat and add red chilli powder immediately pour over the chickpeas..
  10. Serve hot with puris..
