  1. Prepare of Kabuli Chana/ Chickpeas.

  7. You need of Garam masala powder.
  8. Prepare of Chana Masala.

Amritsari Chole instructions

  1. Wash chickpeas and soak them in water overnight. The next morning drain out the water and put it in the pressure cooker. Add cinnamon sticks and cook for 20 minutes..
  2. Add oil in the pan. Temper it with sugar..
  3. Make paste of tomato and onion. First put Chana in the pan. Then add the masala paste of tomato and onion..
  4. Add turmeric powder and salt then cook it for few minutes..
  5. After a while, add cumin powder and garam masala powder. Cook in low flame for few minutes..
  6. Add water in the pan. Cook till the gravy becomes thick..
  7. Then sprinkle chana masala powder and squeeze some lemon juice..
  8. Mix everything and serve..

In this amritsari chole recipe, cooked chickpeas are simmered on low flame for longer period of time. By this time, chana will absorb many flavors and becomes so delicious. While in the punjabi chole bhature recipe, onion-tomato paste is sauteed (bhuno technique) and then mixed with boiled chickpeas.
