Ingredients of Aamrakhand / Mango Shrikhand

  1. Prepare 3-4 litres of thick Curd.
  2. It’s 3 cups of fresh Mango Puree.
  3. You need 1.5 cups of or to taste Powdered Sugar.
  4. Prepare 1/4 cups of warm Milk.
  5. It’s 5-6 strands of Saffron / Kesar.
  6. You need 1/2-3/4 tsp of Cardamom Powder.

Aamrakhand / Mango Shrikhand instructions

  1. Hang up the curd after tying it up tightly in a muslin cloth for 5-6 hours. Keep an empty vessel below to collect the curd residue which drains out. You can use this water to make kadhi, knead the dough for paranthas or bhature etc..
  2. Mix the saffron strands in warm milk and set aside..
  3. Remove the dense curd or Chakka as it is called in Marathi into a large mixing bowl..
  4. Add the powdered sugar and the mango puree gradually and whip the curd with an electric / hand mixer for a good 15-20 minutes until smooth and creamy..
  5. Add the saffron milk and the cardamom powder and fold in gently..
  6. Keep the Aamrakhand in a serving bowl and refrigerate for atleast 2 hours..
  7. Serve chilled!.
